Preheat oven to 385 degrees. In a large bowl, cream together butter, brown sugar, and sugar together for 4 minutes until light and fluffy. Scrape the sides of the bowl with a spatula.
Add eggs and pure vanilla extract and mix for 1 minute longer.
Fold in flour, cornstarch, baking soda, and salt. Be careful not to overmix once you add the dry ingredients as it can create too much gluten in the dough and will result in a tougher cookie. Fold in chocolate M & M candies.
Scoop onto parchment paper lined, light-colored baking sheet. Space the cookies at least 2-inches apart. Bake for 8-10 minutes or just until a light golden color. You don't want to overbake as the cookies will continue to bake on the cookie sheet once it is removed from the oven. It is better to underbake than overbake!
To make the M & M cookies look extra gourmet, add a few M&M's on the top of the cookies once you pull them from the oven.
